Saving Seeds the Way Households Did
Before seed catalogs, a garden renewed itself. The skill of saving seed is simple, cheap, and still worth having.
For most of history, gardeners saved their own seed. At the end of the season they let some of their best plants mature fully, collected the seed, dried it, and stored it cool, dry, and dark to plant the following year. This closed the loop of the garden and cost nothing. It also, over generations, produced varieties suited to a particular place, because the seed that got saved was the seed from the plants that did best there.
The skill still works, with one important caveat that did not exist historically: many modern seeds are hybrids that do not come true from saved seed. Understanding that difference is the key to saving seed successfully today.
How the garden renewed itself
A historical kitchen garden was largely self-sustaining in its seed. Rather than buying new seed each year, the gardener set aside the strongest, healthiest plants and let them complete their full life cycle, past the point of eating, to the point of making mature seed. From those plants the seed was gathered, cleaned, and dried for storage.
This was ordinary practice, and it was also quietly powerful. By always saving from the best performers, the plants that were most productive, most flavorful, or most resistant to local pests and weather, gardeners gradually shaped their seed to their own conditions. Over many seasons this produced locally adapted varieties, the ancestors of many heirloom vegetables prized today. It fit naturally into the year's other record-keeping, since a note of which plants did well and which seed was saved was worth keeping.
The methods, then and now
The techniques depend on the crop, but they fall into a few patterns that have not changed.
Dry-seeded crops, such as beans, peas, lettuce, and many herbs and flowers, are the easiest. You let the pods or seed heads mature and dry on the plant, then collect them, separate the seed from the chaff, and finish drying it fully before storage.
Wet-seeded crops, such as tomatoes, cucumbers, and squash, carry their seeds in moist flesh. You scoop the seeds out, clean the pulp away, and dry them thoroughly. Tomatoes were traditionally handled by letting the seeds and their surrounding gel ferment briefly in a little water, which separates the seed and removes the coating, before drying, a method still recommended today.
Storage was the same for all of them and is the part people most often get wrong. Seed must be fully dry before it goes into storage, and then kept cool, dry, and dark. Damp or warm storage shortens a seed's life or kills it outright. Households kept saved seed in paper packets, cloth, or jars in a cool dry place, and labeled it, because unlabeled seed is a guessing game the following spring.
The one modern caveat: hybrids
Here is the crucial difference between a historical garden and much of a modern one. Most of the varieties households grew were open-pollinated, meaning their seed comes true, producing plants like the parent. Many modern varieties are hybrids, bred by crossing two parent lines, and their saved seed does not come true. Plant seed saved from a hybrid and you may get something quite unlike the plant you took it from, often weaker or unpredictable.
The practical rule is simple. If you want to save seed, grow open-pollinated or heirloom varieties, which behave exactly as the historical ones did and will reward saving. Seed packets and catalogs indicate whether a variety is open-pollinated or hybrid. This is not a flaw in the old method. It is a feature of modern breeding that the old gardeners never had to think about.
