The Root Cellar: Cold Storage Before Refrigeration

How did a root cellar keep food cold without ice, and how is that different from an icebox?

A root cellar and an icebox solved two different problems, even though both are often lumped together as "how people kept food cold before the fridge." An icebox depended on a block of ice, delivered or cut and stored, and worked well for milk, butter, and meat that needed real cold. A root cellar depended on nothing but the ground: soil a few feet down stays close to a stable, moderately cool temperature all year, cooler than a house in summer and warmer than the outdoor air in a hard winter. That made it suited to an entirely different set of foods, mainly potatoes, cabbage, apples, and root vegetables, that needed to be kept cool and humid for months, not icy for days.

Root cellars took several distinct forms, not just the stone-lined chamber dug into a hillside that usually comes to mind first. Historian James E. Gage's survey of the form, Root Cellars in America, catalogs subfloor pits inside a house, dedicated house and barn cellars, aboveground root houses, and simple field pits and trenches dug fresh each season, alongside the more familiar underground masonry room. Which type a household built depended on soil, climate, and how much they needed to store, not on a single fixed design. Below-ground food storage was already established in colonial New England homes, and the practice simply traveled with settlers, showing up in farmhouses across the country as the population moved west through the 1800s.

Siting mattered as much as design. Gage notes that root cellars and root houses were commonly dug into the north or east side of a hill or rise, away from direct summer sun, which let the surrounding earth do more of the cooling work without any mechanical help. A below-ground room needed less insulating than one built up against open air, which is one reason the fully underground form kept a more even temperature through the year than a cellar with even one exposed wall.

By the early twentieth century, the U.S. Department of Agriculture was formalizing what farm households had worked out by trial and error. James H. Beattie's Home Storage of Vegetables, issued as Farmers' Bulletin No. 879 in 1917, gave detailed instructions for exactly this kind of storage. The agency kept revising that same guidance for half a century: Farmers' Bulletin 879 became Farmers' Bulletin 1939, Home Storage of Vegetables and Fruits, revised by Lacy P. McColloch in 1960, which was itself superseded in 1966 by Home and Garden Bulletin No. 119. That bulletin lays out the construction of a basic cone-shaped pit step by step: spread straw or leaves on the ground, stack the vegetables in a cone-shaped pile on top, cover the pile with more bedding, then with three or four inches of soil, firm the soil "with the back of a shovel to make the pit waterproof," and dig a shallow drainage ditch around the whole structure. Cabbage went in differently, packed head down in a long pit rather than heaped in a cone, since a long pit let a household pull out a few heads without disturbing the rest.

Different crops needed genuinely different conditions, and the old guidance was specific about it. Potatoes kept best around 35 to 40 degrees Fahrenheit in moderately moist air, stored in the dark so they would not turn green. Root vegetables such as beets, carrots, and turnips wanted it colder and damper still, bedded in moist sand or moss to keep them from shriveling. Onions needed the opposite: a dry, well-ventilated attic or unheated room, never a cellar, because dampness ruins them. Sweet potatoes were never stored in an outdoor pit at all, since the dampness that root vegetables needed caused sweet potatoes to rot; they were cured for about ten days at 80 to 85 degrees, then held at a milder 55 to 60. Turnips and rutabagas were kept out of the house cellar entirely, because their smell spreads through a home's air. Celery got its own trench, ten to twelve inches wide and about two feet deep, with the whole plant set in root-down and the trench roofed over with boards and a layer of straw once cold weather set in. Parsnips, salsify, and horseradish could be left undug in the garden through the coldest months, since they tolerate a hard freeze but not the freeze-thaw cycling that comes with an unusually mild stretch, which is why the old bulletins recommended mulching them once temperatures dropped and keeping that mulch in place. None of this was guesswork. It reflected decades of USDA testing on exactly which crop tolerated which combination of cold, damp, and airflow.
