Pickling and Fermentation in the Historical Kitchen
Two of the oldest ways to preserve a harvest, how they actually work, and the modern safety rules worth following.
Pickling and fermentation are ancient methods of preserving food, and although people often use the words interchangeably, they are not the same. Fermentation preserves food by encouraging beneficial microbes, which produce acid that protects it, as in traditional sauerkraut made from cabbage and salt. Quick pickling preserves food by soaking it in an already-acidic liquid, usually vinegar. Both create the acidic conditions that keep food safe to store, and both were central to how households put up a harvest for the year.
The historical methods are sound, but as with canning, the modern lesson is to follow tested recipes, especially on salt concentration and acidity, because those are what make the result safe.
Two methods, one goal
The goal of both techniques is the same: make the food too acidic for spoilage and dangerous organisms to thrive. They reach it by different routes.
Fermentation is a living process. When vegetables are submerged in a salt brine, the salt suppresses harmful microbes while allowing beneficial lactic-acid bacteria, which naturally live on the vegetables, to flourish. Those bacteria consume the natural sugars and produce lactic acid, which sours and preserves the food and gives fermented pickles and sauerkraut their tang. This is the process behind traditional sauerkraut, salt-brined cucumbers, kimchi, and many others. The bread leaven and sourdough tradition rests on a related kind of ferment.
Quick pickling skips the microbes. Instead of waiting for bacteria to make acid, you pour an acidic liquid, typically vinegar with salt and often sugar and spices, directly over the food. The acidity comes ready-made, so the process is fast, and the flavor is sharper and more immediate than a slow ferment.
Why households relied on them
Before refrigeration, preserving the summer and autumn harvest was essential, and pickling and fermentation were among the most accessible ways to do it. They needed little equipment, cabbage or cucumbers, salt, a crock or jar, and in the case of pickling, vinegar, all of which a household could keep on hand. They preserved vegetables that would otherwise spoil within days into food that lasted months. And they added variety and flavor to the winter diet, which mattered when fresh produce was unavailable for much of the year.
Fermented foods carried an additional benefit that households valued long before anyone could explain it: they kept people supplied with vegetables through seasons when nothing grew. Sauerkraut in particular traveled well and stored well, which is why it turns up so often in historical provisioning. This was preserving as survival, part of the same seasonal rhythm as canning, drying, and root-cellaring.
Safety note
Fermenting and pickling are safe when done by a tested method, and the details matter. For fermentation, the salt concentration and keeping the vegetables fully submerged under the brine are what allow the good bacteria to win and keep harmful ones out, so follow a tested recipe rather than guessing at salt amounts. For pickles that will be stored on a shelf rather than kept in the refrigerator, use a tested recipe and, where the recipe calls for it, a boiling-water-bath process, since safe shelf storage depends on adequate acidity. Use vinegar of the standard strength the recipe assumes, do not dilute the acid beyond what a recipe specifies, and discard any batch that smells putrid, grows fuzzy mold, or seems slimy in a way the recipe does not describe. Refrigerator pickles and short ferments are simplest and safest for beginners.
